Not only is this pudding gluten free but it’s also healthy and delicious! Chia is very rich in Omega-3 fatty acids and antioxidants. They are also great for weight loss as they form a gel around them when soaked in a liquid, and that makes you feel full!
1 1/2 cup milk
1/4 cup Chia seeds
10 whole pieces star anise
3 tbsp chopped mango (you can add more or less)
Agave syrup (to sweeten)
Anise essence (optional)
In a medium saucepan boil the milk with the star anise.
Reduce the heat and let it simmer for about 5 minutes.
Remove from the heat, cover and let it sit for 10 minutes.
When the milk has cooled, remove the star anise and discard.
Pour the milk in a bowl and add the Chia seeds. Mix well.
Let it sit for 30 minutes or more until the seeds form a gel and the mixture becomes thick. Add agave syrup to sweeten.
Pour into serving glasses, and place the chopped mangoes on top.
Chill for 3 hours. Serve cold.
