You won’t be able to resist taking a bite out of these yummy cookies. The simple sight of a cookie crammed with a colorful mix of chocolate M&M’s AND peanut M&M’s will make this cookie truly hard to resist!
200g butter, softened
1 ½ cups brown sugar
1/2 cup caster sugar
1 tablespoon vanilla extract
2 ¾ cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate soda
180g chocolate M&M’s
180g peanut M&M’s
Pinch of salt
Begin by beating the butter and sugar using a stand mixer fitted with the paddle attachment on medium speed until light and fluffy (around 5 minutes). Alternatively, you can use a handheld mixer to cream the butter and sugar in a bowl.
Add the eggs one by one into the same bowl, until everything is incorporated.
Add the vanilla and continue beating for about 7-8 minutes on medium high speed.
Slowly add the dry ingredients to the mixture and mix on low speed until just combined. Now stop mixing.
Drizzle in the M&M’s and use a spatula to combine the M&M’s into the dough.
Cover the bowl with cling wrap or foil and let it chill in the fridge for about an hour.
Halfway through the chilling process, preheat the oven to 175C.
Line a baking tray with parchment paper and when ready, remove the cookie dough from the fridge and use a medium sized ice cream scoop to scoop out balls of dough onto the baking tray.
Place them well apart because they will spread when baking.
Bake each batch for about 15-17 minutes (depending on your oven).
Allow each batch to cool on a wire rack before eating… if you can resist that is!
